Tri-tip is a triangular cut of beef from the bottom sirloin of a cow. It's known for its lean, tender, and flavorful meat. Characteristics:

  • Shape: Tri-tip is triangular in shape and comes from the tip of the sirloin 
  • Texture: Tri-tip has a loose, spongy grain 
  • Flavor: Tri-tip is rich and meaty, with a balance between the leanness of tenderloin and the richness of ribeye 
  • Cost: Tri-tip is less expensive than other steaks like ribeye or strip 

Preparation:

  • Tri-tip can be cooked by grilling, broiling, roasting, barbecuing, or on the stovetop 
  • Tri-tip can be served medium rare, with the tail or "tip" being more done than the center 
  • Tri-tip can be marinated in olive oil, garlic, rosemary, and lemon juice 

Other names: Bottom sirloin steak, California cut, and Triangle roast.
